Ingredients:
- 4 red-skinned potatoes, cubed
- 1 tbsp Ghee
- 1/4 cup Coconut Milk
- Salt & pepper
- Garlic powder
Directions:
Cook potatoes in boiling water until fork tender. Add about 1 tbsp of ghee, a liberal splash of coconut milk, 1 tsp each of salt & pepper, and 2 tsp of garlic powder. Mix with hand mixer until it gets relatively smooth. Taste and adjust seasonings as necessary.
